What does processing mean in the context of Personal data?

The term 'processing' applies to anything you can possibly do with someone’s personal data, such as collection, recording, organising, structuring, storing, adaptation or alteration, retrieval, consultation, use, disclosure by transmission, dissemination or otherwise making available, alignment or combination, restriction, erasure or destruction. It also includes the process of anonymising or pseudonymising a person's identity.
