Loughborough Student wins IChemE project prize

Jack Ramsey, a final year MEng student in the Department of Chemical Engineering at Loughborough, has won the 2015 IChemE Food and Drink Special Interest Group Undergraduate Project Prize.

The prize is open to undergraduate students both in the UK and abroad who have performed a research project on a topic related to food and drink processing at an IChemE-accredited institution. Jack won the prize for his Part C MEng Professional Development Project, which he undertook at the University of Auckland in New Zealand under the supervision of Dr Filipa Silva.

The research topic was the pasteurisation of brewer’s yeast (Saccharomyces cerevisiae) which is a necessary step after fermentation to prevent secondary fermentation in the can, keg or bottle, and extend shelf life. He found that applying high pressures (up to 4,000 atmospheres) and employing ultrasound inactivated a significant quantity of yeast spores. This allows a reduction in the degree of thermal treatment required, thereby reducing processing times and potentially improving product quality.

Jack will be awarded a £200 cheque and certificate from the prize sponsors (PM Group), at the Chemical Engineering Department’s Annual Dinner in May.
