Loughborough student wins IChemE project prize
The research topic examined the thermal denaturation of milk proteins when milk is mixed with hot water. This has a number of industrial applications, but is also relevant to the simple act of making a cup of tea! He was also able to shed some light on the long standing issue of whether milk should be added first or second, and demonstrated that more denaturation occurs if milk is added second.
The prize includes a £200 cheque and certificate from the prize sponsors (PM Group). The presentation was made to Ricky by his project supervisor, Dr Andy Stapley (top image).
